My Pavlova Recipe
2 egg whites
1 teaspoon vinegar
1 cup sugar
3 tablespoons boiling water
1 teaspoon cornflour
With electric mixer beat egg whites with boiling water. Beat in sugar slowly. Add other ingredients. Turn out onto parchment or wax paper.
Preheat oven to 180 C (355F) and turn down to 120 C (248F) when pav goes into oven. Cook for 1-1.5 hours. Turn off oven and leave in oven until oven is cold. VERY IMPORTANT TO LEAVE PAV IN OVEN UNTIL OVEN IS COLD!
Store in airtight container on kitchen counter up to one week.
Decorate with whipped cream, seasonal fresh fruit and fruit or chocolate sauces!
